In this exclusive interview, Ahmad and Wissam share the story behind their beginnings, their philosophy on craftsmanship, the meaning behind their brand’s name, and their aspirations for the future. Can you tell us a bit about yourselves and your background?
Ahmed Sabeeh Amin: We are two friends who bonded over food, creativity, and the joy of making people happy through simple things like dessert. We both come from non-culinary backgrounds:
I am a full-time banking professional, and Wissam Haitham Al Mourani is in the retail and marketing field.
I have over 24 years of experience in the banking industry in Kuwait, ranging from local to international banks.
Wissam Al Mourani is a full-time retail and marketing manager in Kuwait with one of the major international luxury brands and is also the founder and partner in Sam’s Bakery.
Over the years, we have always been known as the “Best Hosts” and also the “Best Dessert People” among our families and friends. We are the ones who show up with trays of the new trends in Kuwait when it comes to brownies, at gatherings, office events, and birthdays.
What started as a hobby slowly became something more serious when people kept asking, “Why don’t you sell these?” That’s when we began thinking about turning our passion into a luxury brand.

What inspired you both to start Sam’s Bakery, and how did the journey begin?
It started very organically. We were baking for friends, family, and small gatherings, and the response was always the same: the tray would be the first to empty, and someone would ask if they could “order next time.”
The real turning point was when Wissam made a small batch for a work gathering from his home kitchen with the most basic ingredients and normal household supplies. This led people to encourage Wissam to speak to me and seek my opinion on partnering together and growing the brownies from a home business into a local brand, offering both luxury and taste in one box.
This opportunity made both of us realise there was a gap in the market for brownies that feel homemade yet look and taste premium. That combination of demand, encouragement, and passion pushed us to take the leap and officially create Sam’s Bakery.

Why did you choose brownies as your specialty product?
Brownies are comfort food, but they’re also very versatile. You can keep them classic and fudgy, or play with textures, flavours, toppings, and fillings.
We also noticed that in Kuwait there are many cakes and cookies, but very few brands that treat brownies as the main hero rather than just an extra menu item. We wanted to focus on one product and do it extremely well-perfect the brownie before trying to do everything else.

What’s the story behind the name Sam’s Bakery?
The name “Sam” carries a personal touch. It represents someone very close and symbolic to me, as it was my late father’s nickname among his friends in the US where he studied. We always used to hear his friends call him Sam Amin. This made me want the name to reflect his legacy and my appreciation for him making me who I am today.
In addition, Wissam’s nickname is also Sam, which was a coincidence and a unique name that perfectly complements our partnership.
Our family and friends have always encouraged us to follow our passion and never settle for “average.” The name feels friendly, approachable, and memorable. “Sam’s Bakery” sounds like a warm, familiar place where you know something is made with care. Even as an online brand, we wanted that cosy, personal bakery feeling to come through.

How do you divide roles and responsibilities as co-founders?
We’re very clear about our strengths. One of us handles the creative side of the busines, tasting, flavour development, baking, and presentation. The other focuses more on operations, finances, suppliers, customer service, and the overall business direction.
But it’s not rigid. Big decisions are always made together. We taste together, brainstorm together, and if one is overloaded, the other steps in. Communication is key. We treat it as a partnership, not just a business.

What makes your brownies stand out from others in the market?
Three things: Texture, Flavour balance, and Consistency
Our brownies are designed to be fudgy, rich, and chocolatey but not overly sweet. We worked extensively on the recipe to ensure that one piece feels indulgent yet not heavy. We use high-quality chocolate, real butter, and carefully measured ingredients to keep the texture dense but soft, with that perfect crackly top.
We also focus strongly on consistency. Whether you order once or ten times, you’ll get the same taste, same size, and same satisfaction.

Can you walk us through your baking process and what goes into making the perfect brownie?
We start by selecting the right chocolate and cocoa, this is the base of everything. We melt the chocolate and butter gently to keep the texture smooth, then add the sugar and eggs at specific stages and temperatures to get that shiny top and fudgy centre.
We never rush the batter. We fold in the dry ingredients carefully to avoid overmixing, which can make brownies cakey. For mix-ins (like nuts, chunks, or toppings), we balance them so they complement the brownie rather than overpower it.
Even baking is crucial: oven temperature, pan size, and resting time all play a big role. We let the brownies cool fully before cutting to achieve clean, beautiful slices.

Where do you source your ingredients, and how do you ensure quality?
We source our ingredients from trusted suppliers in Kuwait, choosing brands we’ve tested repeatedly. Our chocolate, butter, and cocoa are always from consistent, high-quality sources because even a small variation can affect the final product.
We also follow strict hygiene and food safety standards in our production space. Ingredients are stored properly, batches are measured accurately, and we keep detailed notes so we can trace and replicate each successful bake.

Do you use any special or unique ingredients in your brownies?
Yes. While our base ingredients are classic, we like to experiment with flavour twists. We use things like high-quality sea salt for a sweet-salty contrast, nuts for extra depth, and sometimes seasonal ingredients inspired by local tastes.
We also experiment with different types of chocolate, dark, semi-sweet, and sometimes blends to create richer layers of flavour rather than just sweetness.

What are the different brownie varieties and flavours that you offer?
We usually have a core collection and rotating specials. Our core menu typically includes:
Classic Fudge Brownie, Pecan Brownie, Salted Caramel Brownie, Chocolate Lovers Brownie, Raspberry Brownie, Orange Brownie, Peanut Butter Brownie, Brookies, Chilli Flake Brownie, Mango Velvet Blondies, Lavender Gold Brownie, Rahash Brownie, Cardamom Brownie, Saffron Brownie, Crème Brûlée Brownie, Apple Pie, Pecan Pie, and Butter Shortbread Cookies.
We also introduce limited flavours from time to time, inspired by seasons, occasions, and customer feedback.

Are there any new flavours or seasonal items in the works?
We’re always experimenting. We like to introduce flavours tied to occasions and seasons, richer, more indulgent options in winter and lighter twists in summer.
We won’t spoil the surprises, but you can expect seasonal boxes and special editions. We also listen to customer suggestions when testing new ideas.

Do you cater to specific dietary preferences like gluten-free or vegan options?
We are mindful that many people have dietary preferences or restrictions. At the moment, our focus is on perfecting our standard brownie range, but we are exploring gluten-free and possibly dairy-free/vegan recipes that still meet our quality and taste standards.
For us, it’s not just about removing ingredients; it’s about ensuring the alternative version is genuinely delicious. Once we’re fully satisfied, we will introduce these with careful labelling so everyone can enjoy them safely.

Yes, we offer delivery within Kuwait through delivery partners or arranged drivers, and we also allow pre-orders for events, gatherings, and corporate gifting.

What were some of the biggest challenges you faced in starting and running this business?
There were several:
Consistency: Turning a home recipe into a scalable, repeatable product took time and testing.
Operations: Managing orders, inventory, delivery timing, and customer expectations while baking everything fresh is a constant balancing act.
Brand awareness: As a small brand in a competitive market, it takes effort and patience to build recognition and trust.
Work–life balance: Running a food business means long hours, especially during weekends, holidays, and peak seasons.

But every challenge taught us something and strengthened the brand.

Do you have plans to expand beyond brownies or introduce other baked goods?
In the long run, yes, we would love to expand. But our philosophy is to grow with intention, not simply add items for the sake of it.
Brownies are our signature, and we want to protect that identity. Over time, we may introduce items that complement and fit the Sam’s Bakery story.

Have you considered opening a physical storefront, or do you prefer remaining an online-based brand?
We definitely dream about having a physical space one day – a place where people can walk in, smell freshly baked brownies, and enjoy them with a coffee.
For now, staying online has allowed us to control quality, manage costs, and grow sustainably. A storefront is in our vision, but we want to do it at the right time and in the right location, when the brand is ready.

What is the most rewarding part of running this business together?
The most rewarding part is seeing our brownies become a part of people’s moments and memories like birthdays, office celebrations, family gatherings, or late-night cravings.
We also love working together as best friends and co-founders. We’ve learned a lot about teamwork, trust, and supporting each other under pressure. Every message saying, “These are the best brownies I’ve had,” makes it all worth it.

If you could describe Sam’s Bakery in three words, what would they be?
Fudgy – because that’s our signature texture
Quality – we care about real ingredients and genuine quality
Comfort – because dessert is ultimately about making you feel good

What advice would you give to aspiring entrepreneurs who want to start a food business in Kuwait?
Start small but start seriously. Treat it like a real business from day one.

Perfect your product. Don’t rush to offer a big menu. Do one thing very well and build your name on it.
Focus on quality and consistency. Customers remember how it tasted and how it made them feel.
Understand your costs. Ingredients, packaging, delivery, everything adds up. Know your margins.
Listen to feedback. The market will guide you if you pay attention.
Be patient. Growth takes time. Don’t compare your chapter one to someone else’s chapter ten.
